Product Description Product DescriptionThe Water spray Retort process is similar to the Saturated Steam process in that steam is the primary driving force for reaching the center of the load. However, unlike the Saturated Steam process, air can be introduced into the vessel during sterilization in the Water spray process. Overpressure is provided by introducing air (or steam) into the retort, and to overcome the insulating effects of the air, spray nozzles vaporize the steam and mix it with the air.The retort is flexible in its operation and can handle most, if not all, fragile containers due to its overpressure nature. It is also energy efficient, utilizing a heat exchanger and pump to recirculate both sterilizing water and cooling water. This system allows for the reuse of sterilizing and cooling water without the need for chemical treatment for the next process.The Water spray Retort process involves several steps, including:Prepare Tank: This optional step heats the water in the storage vessel to recipe-defined set points.Come Up Fill: This sterilization step involves filling the retort with water for recirculation through the heat exchanger and preheating the water.Come Up: The pump is turned on, and temperature and pressure are controlled to meet recipe requirements.Cook: The product is sterilized after reaching the established cook temperature throughout the retort.Pressure Cool: The indirect cooling process is initiated in the Process Vessel.Atmospheric Cool: The cooling process continues with pressure reduced to virtually no overpressure.Drain: The water is drained from the retort, and the step ends when the level condition is met.The Water spray Retort offers advantages such as lower capital investment compared to other overpressure retorts, flexibility in processing various container types, and energy savings through the capture of process water after sterilization. However, it may not be the best option for rotary processes, particularly those exceeding 10 RPMs, and cooling times may be extended due to indirect cooling and tightly packed products.
